Ingredients

Scale

DRY

WET

  • 200g (7oz) zucchini
  • 150g (5.3oz) unsweetened oat milk
  • 4 tbsps. birch xylitol

Instructions

  1. First, cut the zucchini into cubes and steam until soft (about 5-6 minutes).
  2. Next, in a big bowl, mix together all the dry ingredients (except the chocolate chips).
  3. Then, in a blender or beaker process the wet ingredients until smooth.
  4. Pour the wet mixture into the bowl of dry ingredients and mix until well incorporated or use food processor.
  5. Finally, mix in the chocolate chips, transfer the batter into a mould lined with parchment paper and bake at 175°C (350°F) for 20-22 minutes until golden.
