Description
Whenever you need something warming and hearty, this broccoli soup is an excellent choice.
Ingredients
- 6 cups (1.5 litres) water
- 1 onion (chopped)
- 1 tsp garlic powder
- 1 tsp ground coriander seeds
- 1 sweet potato
- 1 white potato
- 1 big broccoli head
- 3 big handfuls of spinach or chard
- 1 big or 2 smaller carrots
- salt or broth powder to taste
Instructions
- Put everything besides the broccoli and spinach into a large soup pot. Bring to boil. Cook covered for 8 minutes. Add broccoli. Cook for another 5 minutes, then add spinach and cook for 3 minutes.
- Blend the soup right in the pot with immersion blender – leave some chunks in.
- Season with sesame seeds, cayenne or black pepper, and fresh thyme.
- Prep Time: 5 minutes
- Cook Time: 15 minutes
